I made this cake for a friends granddaughter. I found many recipes for the Oreo cake but choose this one, even though I changed a couple of things.
Chocolate cake
1 3/4 cup all purpose flour
3/4 cup cocoa
2 cups sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup buttermilk
1/2 cup veggie oil
2 tsp vanilla (I like vanilla bean paste)
1/2 cup hot water
20 Oreos chopped in big chunks
Combine the dry ingredients, with mixer running add egg, buttermilk, oil and vanilla mixing well after each. Add hot water. Stir in Oreos. Pour in 2 prepared pans and bake at 350 for 40-45 minutes. Cool completely in pan.
Vanill Cake
1 1/2 cup all purpose flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1 stick butter (cut in cubes)
2 eggs
1/2 tsp vanilla
10 Golden Oreos chopped in big chunks
Combine dry ingrentients add butter a little at a time until it looks like coarse meal. Add eggs, milk and vanilla, mixing after each. Fold in Oreos. Pour in 1 prepared pan, bake at 350 for 40 to 45 minutes. Cool in pan also.
Filling and Frosting
8 oz cream cheese softened
1 tsp vanilla
2 cups powdered sugar
2 cups whipping cream
Whip Cream to stiff peaks and chill for now. Beat cream cheese till soft, add vanilla and powdered sugar. Fold in the whipping cream. Keep chilled when not in use.
I found if there is any heat in the room the filling will melt and your layers may slide across you work space. Press Oreo crumbs into the bottom of the cake. I poured ganache around the top edge.(for it I used a pack of semi-sweet chips and heated 1 cup heavy cream to a simmer and poured over the chips. Stir till smooth, cool)
